What you need:
- 2 cups cooked chicken, cut into bite sized pieces (I bought a rotisserie chicken at Costco and used the white meat after removing the skin)
- 32 oz. chicken broth or chicken stock
- 1 to 2 cups water
- 1 lb. pasta (I used rotini)
- 10.5 oz can of cream of chicken or cream of mushroom soup
- 2 cups shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 2 to 3 teaspoons garlic powder
- 2 to 3 teaspoons garlic & herb flavored seasoning
What you do:
- Preheat oven to 375 degrees.
- Grease a casserole pan (TWO if you are using a shallow pan).
- Pour the chicken broth/stock and water into a large pot and bring to a boil.
- Add the pasta and cook for the shortest time listed on the instructions found on the box.
- After the pasta is cooked, stir in the chicken, can of soup, cheddar cheese, garlic powder, and garlic & herb seasoning. Cook over medium heat for 3 to 4 minutes.
- Pour into greased casserole pan and top with mozzarella cheese. Bake for 25 to 30 minutes. Broil for about 2 minutes if you’d like to crisp up the top.
