Spinach and Fruit Salad

Mid-summer brings tons of delicious fruits into season and a good salad is perfect for any meal with minimal effort. One of my favorite salads is with fresh fruit and baby spinach. Super easy and no cooking required!

Ingredients:
Fresh fruit of your choice
Baby spinach leaves (washed and dried)
Poppy seed dressing or raspberry vinaigrette

Optional add ins:
Sliced avocado
Cooked chicken
Mozzarella cheese
Nuts
 
Directions:
In a bowl, place the baby spinach leaves then add the fruit of your choice. In the photo, I used strawberries, blueberries, blackberries, cut nectarine, and raspberries. Toss with poppy seed dressing and you're done! 

This recipe is also delicious with raspberry vinaigrette dressing or even a little bit of both. So simple and easy to make in a few minutes. 

Try adding avocado or mozzarella cheese (small chunks) to change it up a bit.You can find just about all the ingredients at your local farmer's market. Our family loves to visit our local farmer's market as often as we can.
